Parmesan Crusted Flounder

Parmesan Crusted Fish

4 flounder filets (thawed)
1 cup panko
1 cup parmesan, fresh grated (not from a shaker!)
Homemade prepared alfredo sauce
Fresh parsley, minced
Preheat oven to 425 degrees.
Prepare some alfredo sauce and ladle a few spoon fulls into a shallow bowl. In a second bowl mix the panko, parmesan, and parsley.  {NOTE: You could use jarred alfredo, If you aren't serving the fish with pasta you could dredge the fish in egg or mayo – the alfredo just gives it another layer of flavor).
Prepare a sheet pan with a couple tablespoons of butter and allow it to preheat for a minute or so in the oven.
Dredge the fish in the alfredo sauce, then into the panko mixture, place on sheet pan and place the fish into the oven for approximately 15 minutes (or until fish is cooked through and flaky).
Serve with some linguine noodles tossed with the remainder of the alfredo sauce (not the sauce you dredged the fish though – it has been contaminated with raw fish!). Also tasty alongside a salad and piece of bread.
