Mascarpone Stuffed French Toast with Peaches Recipe

2 eggs
1/2 cup milk
1 tsp vanilla
1 tsp cinnamon
3 to 4 fresh peaches, peeled & sliced
1/4 cup sugar
4 or 5 slices of bread {stale bread – not soft bread – does best}
*optional whipped cream
Beat eggs, vanilla, and milk together in a bowl wide enough to float the bread slices in. Put one slice of bread at a time in the mixture and allow it to soak in on both sides. Place the bread on a hot griddle prepared with butter. Sprinkle the side that is up with a cinnamon before flipping. When the bread is toasty you can flip it.
In a separate sauce pan place the peaches and the sugar. Allow the fruit to cook until a simple syrup is formed and the fruit is warm.
Serve the warm fruit and syrup mixture over the french toast. Tip with vanilla butter {recipe follows} and/or whipped cream if you desire.

:: Vanilla Butter

1/2 cup (1 stick) butter (softened)
1/2 vanilla bean, split lengthwise
1/2 tsp vanilla extract
Place softened butter and vanilla in a small bowl. Scrape seeds from the 1/2 vanilla bean, whisk to blend, cover, and refrigerate.
