Taste of Home Meatloaf Recipe

(Photo from Readandwriteromance.blogspot.com)

I got this recipe from my mom. I love meatloaf and whenever my mom comes to visit, my son loves for my mom to make this.

2 lbs. Ground beef
1/2 Chopped onions and green peppers
1 egg scrambled
1/3 cup of Italian bread crumbs
Ketchup (squirt as much as you need to get firm consistency when mixing beef with bread crumbs)
Sprinkle garlic and pepper (to your desired taste)

Then get a loaf pan and spray the bottom and sides with cooking spray.  Put meatloaf in and I like to top the meatloaf mixture with ketchup and green peppers (my daughter loves green peppers). You would heat the oven to 350 and cook for 45 minutes to 1 hour and enjoy. I normally serve it with green beans and mashed potatoes.

I like this recipe because it is an easy, yet tasty and filling recipe. It also reminds me of home as a little girl every time I make it and I think of my mom every time I eat it. I also love that my kids also enjoy it and it reminds them of grand mom.

*Disclosure - I am doing this post as an entry to Frito-Lay Tastes from Home contest. Frito-Lay will provide me with a variety pack of their Lay's Regional Flavors potato chips to give away to one of my readers. My favorites are Cajun Herb and Spice and Tangy Carolina BBQ. You can go here to view all the flavors.
