Peach Cornmeal Pancakes


 

 

 

 

 

 

 

 


:: Peach Cornmeal Pancakes

3/4 cup cornmeal
3/4 cup all purpose flour
3 Tbsp suga
1 tsp baking powder
1/2 tsp baking soda
2 eggs
1 1/2 cups of organic milk
1 tsp vanilla
2 to 3 peaches peeled, pitted, and sliced
Mix the dry ingredients together, add the remaining ingredients to your bowl except the peaches and whisk together until combined well. Preheat your griddle or pan and butter it liberally. Pour a small amount of batter onto the hot griddle. Place a few pieces of peach on top of the batter quickly. Allow the pancake batter to form bubblesand then flip. Cook until golden and lightly browned.
Serve with maple syrup and/or more diced peaches and whipped topping if you desire.
