Sloppy Janes


















I just saw an interesting dish I thought I'd share with you. It is like sloppy joes but with a twist.  The difference is fire roasted tomatoes.  Ground turkey instead of ground beef and  corn bread. This recipe calls for ground turkey but you could so make this with ground beef and it would be equally delicious; however, making it with ground turkey does lower the fat if that is your thing.

:: Sloppy Janes

1 lb. ground turkey
1 can fire roasted tomatoes
1 clove garlic, minced
2 sweet peppers (or 1/2 to 1 bell pepper), small dice
1/2 onion, diced
1/4 cup brown sugar
1 Tbsp red wine vinegar
1 Tbsp Worcestershire sauce
First, saute the onions and peppers in a pan together with a little olive oil.  Once the onions and peppers begin to soften add the garlic and the ground turkey. Once the turkey is browned, add the remaining ingredients: fire roasted tomatoes, brown sugar, vinegar, and Worcestershire sauce. When all of the ingredients have simmered and most of the liquid was cooked out, turn it off. Serve over cornbread. {Recipe for cornbread here.  The only difference was instead of making it thick in a cast iron skillet make the same recipe in a 9×13 Pyrex dish. This made the cornbread thinner.  Then cut it into squares and serve the sloppy jane mixture right over the top.}
