Turkey Sausage and Potato Hash

:: Turkey Sausage and Potato Hash

1 package of turkey smoked sausage (even turkey brats will work)
5 to 6 large potatoes, peeled
2 Tbsp of coconut oil
Chop potatoes into bite sized cubes. Chop sausage into bit sized pieces. Heat a griddle or large cast iron skillet over high heat. Add coconut oil and potatoes. Allow potatoes to sit and cook a while before turning. You don’t want to move them so that they will get a crust on them. If you stir them too much they’ll be mushy (and we don't want that.) When the potatoes are close to done you add the sausage.Serve with fried eggs and toast. (Image Credit and Recipe: Wholesome Mommy :: by the Centsible Sawyer)
