Homemade blueberry syrup

(Photo from Crumblycookie.net) :: Bluberry Syrup 2 cups organic blueberries 1/2 cup of sugar 1/2 cup of water Place all ingredients in a saucepan on the stove and allow to boil. Once a syrup has been made by the sugar and water take a potato masher and mash the berries up to the consistency that you like. Allow the syrup to cook a little longer until the syrup will coat the back of your spoon (generally this syrup takes 10 to 15 minutes but you will want to watch it for the right consistency. If it thicken too much you can always add water, but you don't want to scorch the sugar!). At this point the syrup is ready to eat. I like the skin and fruit in my syrup. However, if your family prefers a true syrup (without the skin and fruit, only the juice), just strain the syrup through a sieve. Recipe of the Week

(Photo from AllRecipes.com) :: French Toast with Fresh Peach Topping 2 eggs 1/2 cup milk 1 tsp vanilla 1 tsp cinnamon 3 to 4 fresh peaches, peeled & sliced 1/4 cup sugar 4 or 5 slices of bread {stale bread – not soft bread – does best} *optional whipped cream Beat eggs, vanilla, and milk together in a bowl wide enough to float the bread slices in. Put one slice of bread at a time in the mixture and allow it to soak in on both sides. Place the bread on a hot griddle prepared with butter. Sprinkle the side that is up with a cinnamon before flipping. When the bread is toasty you can flip it. In a separate sauce pan place the peaches and the sugar. Allow the fruit to cook until a simple syrup is formed and the fruit is warm. Serve the warm fruit and syrup mixture over the french toast. Tip with vanilla butter {recipe follows} and/or whipped cream if you desire. :: Vanilla Butter 1/2 cup (1 stick) butter (softened) 1/2 vanilla bean, split lengthwise 1/2 tsp vanilla extract Place softened butter and vanilla in a small bowl.
